pink lady/gentleman cake

I decided that for J’s birthday, I would take my first foray into real cake baking. I mean REAL. with layers and everything!! I even dusted off my never used tips and put them next to my computer. Since it would my first time making a celebration cake from scratch, I had to choose carefully, and so, I chose to make this. Nothing like a pink lady cake to celebrate a young lady :) .

And so, I jumped in. At first I squealed with excitement at how pretty the dough was! At first I was worried because I misread the recipe and thought it said, “it should look like strawberry cream”, and this does not look like strawberry cream. I rescanned the recipe inĀ  a panic, and aha! She wrote strawberry ice cream!! Perfect description. Finally, after strenous hand mixing (i really need a standing mixer), the dough got even prettier and looked like this!!

oh. mah. gaw. isn’t it beautiful? it’s heavenly. took a lot effort to not eat it straight away. One of the main reasons why I chose this recipe was also because it comes with cream cheese frosting. Fluffy, rich, cream cheese frosting. It really made the cake.

The cream cheese frosting really paired beautifully with the cake. Since the cake is rather light and fresh, the frosting adds that extra cake that makes it a celebration cake. So many beautiful swirls!! So exciting!

I didn’t think about how with cakes, the layers don’t always come out perfectly even. And thus, i began slicing away at the tops of the cakes. Unfortunately, I also nicked my finger in the process. J, my blood, sweat and tears were really in this cake. But, it ended well, and the cake came out beautifully, no blood included.

The next morning I threw on some strawberries for garnish. Then stuck it in my cake carrier. Everyone on the bus was eyeing it in envy :)

After sampling it, my coworker said, “Hey! I don’t like how it’s called a pink lady cake. It should be called something else”. Then I answered, “How about a pink gentleman cake?”. He agreed that was a lot better. And so, it has been dubbed pink lady/gentleman cake!
